Recipe of the Week:

Spinach and Cheddar Frittata

Make the most of the morning with this healthy yet decadent breakfast the WHOLE family will enjoy, as a bonus you can make it in advance or have it as a light lunch! Throw any veggies you have in there and let the oven do the work.

Ingredients

  • 1c baby spinach leaves
  • 1/2 c diced tomatoes

  • 1/2 garlic clove, finely diced

  • 2 whole eggs+2 egg whites

  • 20g grated cheddar/dairy free cheese

  • Salt and pepper

  • 1 tomato, sliced

Directions

1. Preheat oven to 180 C.

2. Place an oven-safe fry pan over medium heat and

spray with cooking spray. Add spinach, diced tomatoes,

and garlic. Sauté for 3-4 minutes.

3. In a large bowl, whisk eggs and egg whites. Stir in

spinach mixture and cheese; season with salt and pepper.

4. Pour egg mixture into pan, reduce heat to low, and

shake pan to level ingredients. Place sliced tomato on

the top and transfer to the oven. Bake for 10-15 minutes,

until slightly golden.
